I have never heard the 1981 version.
But I love the way he performs it in Two Portraits. His moves were much more flowing and natural during that age and the music sounded more unique. The older he got, the more he started moving like a machine and playing too precise. There are also some performances where he moved in the same tiny circle over and over again through ought the whole piece. Ha. I never saw him do this when he was younger. (but maybe someone else has seen footage where he has?)

There are my impressions  in seeing and in listening Gould's interpretation of Contrapunctus 1 in the "Two portraits-off record" performance 1959 and in the CBC recording 1981.
1959:The young Gould was extremely inspired: he flowed in the notes with passion and his body had a vibration.His life was open.
1981 :The late Gould was extremely concentrate: his approach  at the piece was crystal-clear and his body was crouching on the piano.His life was at the end
Also these performances, like the Goldberg, are a Gould's testament, in the course of His life.
I'm moving by this.
What's your impression about this matter?
