[F_minor] Two Portraits Techie Q

I don't if this has been covered in the previous threads. There's a scene
in On the Record, where the sound men were bantering about how Glenn's habit
of doing many takes. When one of the techie gave the controller a back rub,
Howard Scott mentioned that "he hasn't moved a knob since he came in here"
and the techie responded said "that's the best kind of controller at
Masterworks...the less knob probing(sp?) the better. That's been the curse
of it in the past...". What does this mean in respect to sound
engineering? What are the knobs and what do they do? Is it same thing as
the mixer board that we have now?
