In my mind the two abbreviations you ask about are unambiguous:

    1. "est." stands for "estimated". So " Dictation  3/4 hr. est" means
he is estimating 45 minutes for dictation.

    2.  "m.s." is the standard abbreviation for "manuscript". So
"m.s.[?] editing   3/4 hr." means he is allocating 45 minutes for
manuscript editing.
